Chocolate Cake

Ingredients for the Chocolate Cake:

      • 4 Large Eggs
      • 1/2 cup pure Maple  Syrup **
      • 1 tsp Vanilla Extract
      • 1 cup Almond Flour
      • 1/2 cup unsweetened Cocoa Powder ( i use Hershey’s Special Dark)
      • 1/2 tsp Kosher Salt
      • 1/2 tsp Baking Soda

Ingredients for the Chocolate Frosting:

      • 1 Tbsp Coconut Oil
      • 1 Tbsp pure Maple Syrup**
      • 2 Tbsp unsweetened Cocoa Powder, Hershey’s Special Dark


For the cake:

      • Preheat the oven to 325 degrees F
      • Mix all of the ingredients just until they’re well incorporated and smooth
      • Pour it into a 9×9 baking dish and bake for 30-35 minutes (or until toothpick comes out clean)
      • wait until it completely cooks before frosting

For the frosting:

      • Melt the coconut oil, and then mix in the cocoa powder, and maple syrup and then pour it over the top of the cooled cake. Garnish with fresh strawberries or dusting of cocoa powder or whichever garnishes you wish!
      • This cake also tastes really great with some ice cream, or even delicious creamy Greek yogurt. The sponge of this cake even makes a great foundation for a delicious trifle!

**Substitute Notes**

      • You can substitute 1/2 cup of mashed banana or any kind of syrup for the maple, and same goes for the frosting
      • If substituting banana, please note it’s not as sweet so you may want to add some Stevia drops ( like Sweet Leaf vanilla cream) to the cake to bring out more sweetness…after all it is a cake 😉
